guest recipe: paleo coconut bread (three ingredients!)

cake

Those who know me would say that I’m a little short on patience. I want to get things done fast, I move fast and I eat fast. It’s something I’m working on – I have to consciously remind myself that there’s no rush to do things.

My lack of patience is also probably why I tend to make things that are either low on fuss, done in a relatively short amount of time, or with few ingredients – which is why this three-ingredient recipe instantly caught my eye. Yep, you read that right: three ingredients! It’s as easy as making a cup of tea. Seriously.

Who needs to buy a chocolate milkshake, thickshake or ice-cream drink concoction when this healthy smoothie tastes SO MUCH better and it’s good for you (you’ll be satisfying your chocolate craving while sneaking in some veggie goodness thanks to the baby spinach. Plus, blending the chia seeds makes them more easily absorbed in the body).

Who can’t resist a ‘dessert for breakfast’ recipe? This piece of goodness is from Prevention’s new Sugar Smart Diet book that contains loads of low-sugar recipes. Great healthy inspo if you’re trying to cut down on the sweet stuff. This Strawberry-Coconut Chia Breakfast is my favourite out of all of the recipes because it contains some of my favourite ingredients.

berry bombshell smoothie

berry-bombshell

I’ve been feeling a little under the weather recently and am suffering from post-Summer blues (if there’s such a thing). So I’ve decided to whip up something that’s immunity boosting, fruity and refreshing. Result? The Berry Bombshell smoothie – full of nutrients including vitamin C for immune function, anti-inflammatory omega-3 and antioxidants, magnesium for nerve function and muscle-building protein. Ideal for breakfast or as a nourishing snack. Bonus: It’s gluten-free, dairy-free and refined sugar-free.

five yummy ways to use cacao

3-chocolate-recipes

My friend’s version of my raw cacao treat! Yum yum 🙂

If there’s one ingredient I always have in my kitchen, it’s raw cacao. It’s versatile, delicious and a real superfood.

While it looks like the packaged chocolate powder you buy in the baking aisle of the supermarket, what I’m referring to here is the raw grounded stuff you get from cocoa beans. It’s what gives chocolate it’s flavour – like vanilla bean for vanilla ice-cream or the spices that make curry powder.

book review: clean living fast food

isbn9780733632372

Clean Living Fast Food by Luke and Scott

The lowdown:

A simply illustrated, easy-to-follow cookbook full of comfort food and much-loved favorites given the Paleo (free of wheat, sugar, dairy, grains, yeast and gluten) makeover.

Recipes include pizza, ice-cream, various desserts (lots of chocolate ones), doughnuts, burritos and fish & chips. Highly appealing for the time-poor but healthy cook. Not a book to be left for display on your coffee table as there’s so much do-able (not just for show) healthy food inspiration, and recipes can be tweaked to suit your needs.

On the downside, not a lot of cuisines represented here, and there are only several breakfast ideas. Still, a great book if you’re not a devoted Paleo follower, or haven’t even heard of Paleo for that matter!
