I love to transform simple, wholefood ingredients into decadent and delicious pretty looking things, just like these pancakes!
I’ve made Teresa Cutter’s simple Banana Bread Pancakes here, and served them with creamy coconut yoghurt, chopped banana and some matcha tea powder. The result is heaven in every mouthful. Plus, as with lots of Teresa’s recipes, they’re wheat-free, dairy-free and full of antioxidants and protein.
The reason why they’re my favourite is because they’re so versatile. Want chocolate pancakes? Simply add cacao to the mix. Blueberries? Add them to the batter before you flip them over. Love matcha? Simply add a teaspoon to the recipe. Experiment and have fun – they’ll turn out great no matter what you choose to add to them.
