This banoffee pie is creamy and absolutely heavenly. The traditional banoffee pie is full of refined sugar and contains dairy, this recipe is refined sugar free, gluten free and vegan.
I made this indulgent Julia and Libby recipe for my cousin’s birthday recently and it turned out exactly what I thought it would be: not too sweet with that strong banana flavour.
Note: I took out the peanut butter as I just wanted to have more of the banana taste come through. I also soaked the nuts the night before so that it was creamier and easier to blend.
