I’m fortunate to work with nutritionists at my day job. All we do is talk about food. I love it.
If you were to be a fly on the wall, a typical chat would be like,“Have you tried (insert food/drink/recipe?!)”. And I’d be like, “Oh yeah! What do you have it with? What’s it good for? I’m sooo going to make it this weekend.” You get my drift 🙂
Anyway, one of the best perks about working with nutritionists is that they almost always have a healthy version of any store-bought or takeaway meal.
This chicken nuggets recipe is one of those meals. Plus it’s so easy and even more delicious than any boxed or packet kind.
Prep time: 20 minutes
4 chicken fillets, chopped to bite sized pieces
3/4 cup almond meal
1 tsp sea salt
1 tsp ground pepper
2 pinches paprika
2 pinckes chilli flakes
2 eggs, lightly whisked
Olive oil to pan fry
1. Place all dry ingredients in a large bowl.
2. Dip and completely cover a chicken fillet piece in the egg and then roll in the dry mixture.
3. Repeat step 2 until all chicken fillets are covered with batter.
4. Pan fry the nuggets a few minutes each side until golden and crispy.
