Ever heard of The Farm? It’s one of the most amazing ‘paradise-on-earth’ eco-spa / raw food retreat places I’ve experienced (and would def go again!).

This was me earlier this year – in their outdoor garden COFFEE BATH! – said to be a great detoxifier 🙂

Pretty luxurious, right?

Aside from feeling like I never wanted to leave, I’ve also wanted to recreate the amazing raw food recipes they had on offer.

Below are a few of their decadently rich (and healthy) ice-cream and sorbet recipes which The Farm is well known for – they use their plantation’s huge supply of coconut meat, coconut water and milk from fresh young coconuts to make them. Harvested on site and transferred to the kitchen, the raw chefs here have fun adding different combinations of tropical fruits and nuts! All recipes are WF, GF and refined sugar-free x

The Farm’s famous ice cream and sorbet recipes:

Method:

1. Blend all ingredients in a blender or food processor until smooth.
2. Freeze overnight.
3. Each recipe makes about 35 small scoops; you’ll need 3 to 4 scoops per serving.
4. Serve with your favourite mix of tropical fruits!

Vanilla ice-ream

4–6 servings

Ingredients:

2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup water
1/4 cup coconut oil
1 vanilla bean, scraped
Pinch salt
For this recipe, add 2 tbsps toasted sesame seeds if you want a nutty sesame flavor as well.

Chocolate ice-ream

4–6 servings

Ingredients:

1 cup cacao powder
2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup coconut water
1/4 cup coconut oil
1 vanilla bean, scraped
Pinch salt

Mocha ice-cream

4–6 servings

Ingredients:

1 cup grain coffee
2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup coconut water
1/4 cup coconut oil
1 vanilla bean, scraped
Pinch salt

Ingredients for the vegan, raw, chocolate ice-cream

Green tea ice-cream

4–6 servings

Ingredients:

1/2 cup green tea powder
2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup coconut water
1/2 cup coconut oil
1 vanilla bean, scraped
Pinch salt

Coconut sorbet

4–6 servings

Ingredients:

2 cups young coconut meat
1 cup coconut milk
1 cup buko juice
Pinch of salt
1/4 cup honey

Black cherry sorbet

4–6 servings

Ingredients:

4 cups fresh black cherries
1 tsp black pepper
1/4 cup honey
1/2 cup orange juice
1/4 tsp salt or coconut sorbet

Method for the below fruit ice-cream recipes:

1. In an air-tight contained, pleace the fresh fruits and place in the freezer overnight.
2. Slice the fruit into small pieces.
3. Blend with the other ingredients, and freeze overnight.

Banana ice-cream

8–10 servings

Ingredients:

10 fresh bananas, peeled
2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup coconut water
1/4 cup coconut oil
1 vanilla bean, scraped
Pinch salt

Pineapple ice-cream

8 – 10 servings

Ingredients:

8–10 servings
2 pineapples, peeled and frozen
2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup coconut water
1/4 cup coconut oil
1 vanilla bean, scraped

Mango ice-cream

8–10 servings

Ingredients:

10 mangoes, peeled and frozen, seed discarded
2 cups coconut meat
2 cups cashews, soaked
1 cup honey
1 cup coconut water
1/4 cup coconut oil
1 vanilla bean, scraped
Pinch salt
