pineapple stir-fry


I love pineapple but while it’s great on its own, this tropical and sweet fruit adds a delicious addition to a stir-fry. I just used a whole lot of veggies I had in my fridge and a bit of ham for a meal that’s packed with fibre, protein and antioxidants. You can replace ham with beef or anything else you like, or you can just have this as a vegetarian dish.

Pineapples contain the anti-inflammatory enzyme bromelain, is high in vitamin C and soluable fibre.

Serves 2


Chopped garlic and onion as desired
A handful of brown mushrooms, thinly sliced
1 cup of chopped bok choy, roughly chopped
1/2 red capsicum, thinly sliced
1/2 head of broccoli, roughly chopped
1 handful of pineapple pieces
Juice of 1/2 a lemon
1 tbsp tamari
1 tsp fish sauce
1 tsp olive oil or coconut oil for frying
Ham or beef or chicken pieces (optional)


1. Sauté the onion and garlic in oil until lightly brown.
2. Add all the vegetables and mix well until lightly cooked, then add your preferred meat as desired.
3. Add the pineapple, lemon, tamari and fish sauce until all the ingredients look ready to eat 🙂
4. Serve immediately.

    Here is a wonderful, fresh tasting stir fry with fresh pineapple and veggies combined.
    Remember stir frying doesnt heat your house up, if you live in hot areas like me.
    I know it is autumn in Las Vegas, my favorite time of year because it is cooler….
