This is THE breakfast of champions. Why? Because it’s an adapted recipe from super-fit and healthy fitness trainer Luke Hines! It’s paleo, grain-free and full of protein and healthy fats to fuel your day.

Many people think it takes a lot of work and preparation to make their own muesli or granola but, I assure you, it takes less than 15 minutes to make this batch. Plus, making it yourself means you know what’s in it (natural wholefood ingredients) and you’ll be sidestepping many of the seemingly wholesome packaged varieties you find in the supermarket which are often laden with sugar and cooked in the wrong type of oils! (Not what you want if you need lots of energy to get you going).

Serves 2

Prep time: 2 minutes

Cook time: 10 minutes

Ingredients:

1 cup coconut flakes
1/2 cup mixed raw nuts and seeds
1 tbsp coconut oil
1 tbsp chia seeds
1 tbsp honey
Pinch of cinnamon

Method:

1. Heat coconut oil in a pan until it melts completely.
2. Lightly toast all the ingredients, in low heat, until a light golden brown in colour and it smells-like-a-bakery in your kitchen.
3. Sprinkle over porridge, smoothies, fresh fruit or have it like cereal with almond milk and bananas. Yum!
