is carrot cake healthy?

Well, it can be – when it’s a yummy raw version like this one, which is free of gluten, wheat, refined sugar and dairy.

Traditional carrot cake recipes use ingredients such as self-raising flour, sugar, oil and golden syrup – none of which offer any nutritional value, but a whole lot of calories. The icing isn’t usually that healthy either, with cream cheese and icing sugar adding more richness and unnecessary (ok, I’ll admit, creaminess and flavour) calories to this treat which can otherwise be taken out. Enter the raw carrot cake version!

A few weeks ago I posted my healthy take on this traditional favourite called Raw Carrot Cake Bliss Balls, but because I love (read: addicted to) this healthy, raw version so much, I had to share the cake version on one of my fave health inspirational sites, Eat Beautiful.
