papaya-berry boats


These papaya boats instantly transport me to a tropical island getaway. They can be eaten as a light breakfast, a summer dessert or a healthy snack and they only take seconds to make.

Nutritionally, papaya is high in vitamin C and contains enzymes that aid digestion. Just scoop the papaya seeds out and fill it with all kinds of delicious things! This one is a straight up fruit salad combo, but you can fill them with Bircher muesli topped with nuts, honey and cinnamon for a nourishing high-fibre breakfast, or you can even serve fresh Vietnamese papaya salad inside for a visually stunning lunch to impress your family and friends.

Serves 2

Prep time: 5 minutes


1 papaya
1 cup of mixed frozen berries
A sprinkle of shredded coconut


1. Cut papaya in half down the centre.
2. Scoop out all the seeds from each half.
3. Spoon the mixed berries into each papaya boat.
4. Sprinkle shredded coconut on top.
